I tried baking Dark Chocolate mud cake last weekend. Actually I wanted to do a moist chocolate cake but after flipping through recipe books, I decided to try this. Well, it turns out delicious! It's very chocolatey, moist and addictive, hehe. Must eat more than one piece as one is not enough!
Here's the recipe:
Ingredients:
340g dark eating chocolate, chopped
200g unsalted butter, chopped
1 tsp of instant coffee granules
155ml water
135g brown sugar
130g plain flour
35g self raising flour
2 eggs
40ml coffee-flavoured liqueur
Dark Chocolate Ganache
65ml cream
200g dark eating chocolate, chopped
Method
1. Preheat oven to 160 degrees C. 15cm square cake pan lined with
baking paper
2. Combine chocolate , butter, coffee, the water and sugar in a large
sauce pan; stir over low heat until smooth. Cool 20 mins.
3. Whisk in shifted flours, eggs and liqueur, slowly so that they are
mixed thoroughly.
4. Pour the mixture into pan, bake about 1 hour 15mins. Cool cake in pan.
5. Meanwhile , make the dark chocolate ganache.
6. Turn cake, top-side up, onto plate; spread with ganache. Top with raspberries or strawberries if desired.
Dark Chocolate Ganache
1. Bring cream to a boil in a small saucepan; remove from heat, add chocolate , stir until smooth.
2. Let it cool, or refrigerate, stirring occasionally about 20 mins or until spreadable.
Some of my personal alterations:
1. For cream, I use Whipping cream bought from supermarkets
2. For instant coffee granules, I use instant coffee essence such as a sachet of instant Nescafe coffee and
measured it accordingly
3. For coffee-flavoured liqueur, I just mix some coffee essence into wine.
Note: Liqueur can be omitted, and just mix some coffee essence with a little milk instead.
