Stuff Tomatoes
"Help mummy, I am bored with the normal meat dishes " My daughter phoned me during her confinement time. According to chinese tradition, there are a lot of rules during confinement (or pantang in Malay). Various types of food are considered not suitable to a mother who has just given birth. During my confinement(33years ago), I was not even allowed to switch on air-conditioner nor fan including no reading of any sorts! Reason: Cold air will cause rheumatism in old age and reading will cause blindness, says my grandmother!
So, I cooked this dish of stuffed tomatoes for her. I saw this recipe while browsing through recipe books in a book shop.
My simplified version of the recipe:
A. Brown some thinly sliced ginger and garlic in sesame oil. Then add a handful of minced
chicken meat and fry till cooked. Add a pinch of salt. Mix 1 tsp of corn flour with 2 Tbsp of water and pour into the cooking meat mixture to thicken. Leave aside to cool.
B. Cut off the top of the tomatoes and scoop out the soft pulp. Fill the tomatoes with A (minced
chicken meat) Bake in a preheated oven 170 C for 15mins or until slight brown.
C. Meanwhile, boil the scooped out pulp in a pot. Add some gojiberry or wolf berry and 1 Tbsp of
chopped onions. Season to taste with salt, pepper and honey.
D. Place the cooked stuff tomatoes on a serving plate, pour C over it. This dish can be eaten with
cooked brown rice.
Stuff Tomatoes can be eaten as a side dish or adds color to confinement dishes.
