A healthy cake made from oats and orange.
Ingredients
150 g plain flour
100 g Quaker oats (or any other brand oats)
220 g butter
200 g caster sugar
4 eggs
2 tsp baking powder
1-2 oranges
Method
1. First, sieve flour with baking powder then mix with oats.
2. In another bowl, mix eggs with 2 tablespoons of orange juice.
3. Cream butter and sugar until soft. Grate orange rind and add to mixture.4. Alternately, add egg mixture (2) and flour and oats mixture (1) into the butter and sugar, a little at a
time.
5. Grease and flour a big cake tin or chiffon tin. Pour mixture into it and smooth the top.
6. Bake at Gas No. 4, or at 175 C for 40-50 minute.
This cake is very soft and loose because the oats tend to drop out easily. Refrigerate awhile for easier cutting and handling.
